Berries and Lavender Vanilla Bean Ice Cream Soda



Yesterday was National Ice Cream Soda day and so I decided that it was the perfect time to make myself one.  Now, I do not drink soda mind you so I am not sure where the impulse came from.  Maybe it was the hot weather, but whatever the case I wanted to make something other than a rootbeer float.  I actually haven't drank any pop (as we call soda in the midwest) since I was in highschool and it was kind of a no no on the sports teams I was on.  I tried a sip in college and thought it was way too sweet.



So I decided to make my own "soda" from a berry puree laced with vanilla and sweetened with a little agave nectar combined with sparkling water.  It turned out delicious and way better than any soda in my opinion.  




As far as the ice cream went, I had made some lavender vanilla bean ice cream this week and I thought it would be wonderful with the berries in the soda! 




As it turned out, it was the best ice cream soda I have ever had!  Better than a root beer float.  Bubbly with sweet berries and cool vanilla scented ice cream laced with lavender...perfect for a 90 degree humid day!  It was an adult ice cream soda, and I have a feeling you would love it as well!  Hope you all are having a wonderful weekend!




Berries and Lavender Vanilla Bean Ice Cream Soda
Serves 1


1/3 cup mixed organic berries
2 tsp agave nectar
1 tsp pure vanilla extract
lavender vanilla bean ice cream (or vanilla ice cream if you prefer)
Sparkling water


Puree the berries, agave nectar and vanilla together.  Pour into the bottom of a large tall glass.  Scoop about 3 scoops of the lavender vanilla bean ice cream into the glass, and pour the sparkling water over to almost the top of the glass.  Stir with a spoon, and enjoy!

  1. This is so creative and a beauty, too. I have seen your recipe for the lavender ice cream and I really want to try making that. I keep debating on buying the ice cream maker. This soda is really leaning me toward purchacing one. Love the photos too.

    1. Thank you :)! That ice cream is definately one of my favorites, it is so fragrant! You should definately get an ice cream maker! I only paid $45 for a Hamilton Beach one at Target, and it has lasted me for years!
