I eat chia seeds every day. But, it is not in such an exciting recipe, I simply soak them in fresh coconut water and it is a great after workout rehydrator/energizer (which I would definately reccomend you try). But, I thought maybe I ought to try using them in a more exciting way. Do not get me wrong, I am addicted to my coconut water soaked ones, but I thought maybe something chocolaty. I have tried chia pudding, but I wanted something kind of cookie like, or a little bite.
I have seen a lot of recipes for energy balls lately, so I thought why not make my own using chia seeds. A few years back I had made German Chocolate Bourbon Balls (not so healthy) and I thought the flavors would be perfect in these! Funny how I got inspiration from something boozy and sugary to make something healthy and energizing. That is usually how my mind works though. They turned out delicious! My Mother saw them and was all like "Oooh...what are THOSE???" She loved them as well, since she is a big German Chocolate fan. They are sweet, but not too sweet or heavy so that they weigh you down, more like they make you happy when you eat them and energize you! As my Mother put it, they are perfectly balanced.
2 Tbsp Chia Seeds
1/4 cup plus 2 Tbsp filtered water
10 medjool dates, pitted
1 Tbsp raw coconut oil
a pinch of sea salt
1/2 cup raw cacao powder
1 1/2 cups raw walnuts, soaked and dried, finely chopped
1 1/3 cups shredded dried coconut
Combine chia seeds and water in a bowl and mix together. Let seeds absorb water. Once absorbed, place in the food processor with the dates and coconut oil, and process until smooth and well combined. Add the sea salt and cacao powder, and process until smooth and well combined. Add the walnuts and process until evenly distributed, then remove from the processor and stir in the coconut (the mixture will be very thick, and you may need to use your hands). Form the mixture into 16 balls, and enjoy! Store extra in the fridge.
