  6. Hi, I just love your recipes!! Thanks so much!! Can you please explain the sprouted and dehydrated buckwheat. Why do you use it, how does it add to a recipe, flavour, consistency etc. you sometimes say you can use extra coconut in place of buckwheat, how does that change the end product? Thanks so much for your time!!

    1. Thank you :)! I am happy you enjoy them. I use it because it adds crunch like nothing else does, it is low in fat, and it is gluten free. I have replaced the nuts in many of my crusts with it, because I am trying to cut back on my intake of them (they do not like my tummy sometimes even if sprouted). You can see my helpful tips page on how to make it. It changes the end product slightly in that it is not as crunchy, but I want people to still be able to make a recipe even if they are not willing to make the buckwheat. Because it will still taste good, just have a little less crunch.

  7. Hello! Firstly I just want to say that I love your blog. But I live in Sweden and here you cannot buy fresh coconuts, and you often uses it in your cake recipes. So i just wanted to ask what you could replace it with?

    1. Depends on the recipe but if it is to replace something creamy you can use an equal amount of soaked cashews.
